The Story of Serenity
Marking the first time SUMMIT has collaborated with a restaurant or bar to brew a recipe created by an employee, Serenity Pale Ale reflects a unique partnership between Rebecca Del Greco, bar manager of MOZZA MIA restaurant in Downtown Edina, and SUMMIT brewmaster Damian McConn.
Serenity came to be because I participated in a PARASOLE-wide contest to see who could create the best home brew, says Del Greco, and we asked Damian to serve as one of the judges.
McConn was so impressed by her entry that he offered to produce a micro-batch of Serenity Pale Ale approximately 8 to 10 barrels for limited release at Parasole Restaurants during the 2014 American Craft Beer Week.
Its a unique beer, resulting from a unique collaboration, adds Del Greco. Only Parasole would invest in outfitting each restaurant with the equipment we needed to hold a contest like this. And only SUMMIT would bring the winning beer to life. Its amazing how educational the experience has been.
What does Serenity taste like?
My goal was to create a classic Pale Ale bright, smooth, with fruity notes and a hoppy finish, says Del Greco, who used Chinook hops for their bitterness and Cascade hops for their flavor and aroma, plus caramel grains to further balance the bitter notes. I wanted a beer that goes great with pizza, pastas, burgers all my favorite comfort foods. I think I succeeded.
Serenity Pale Ale is created by SUMMIT BREWING COMPANY and is rated at 7.2% ABV & 55 IBUs.
